By working directly with dayboat captains in Santa Barbara and Monterey, we receive snapper, black cod, and rockfish that were swimming in the Pacific less than 24 hours prior.

This direct relationship ensures absolute quality and freshness. When fish is sourced sustainably and cooked immediately, its flavor is clean, delicate, and vibrant. We need very little seasoning—just a light sear, a squeeze of fresh lemon, and a drizzle of premium olive oil to let the natural sweetness of the sea shine through.
