Every small plate must look stunning and taste perfect, even under the ticking clock of a live television broadcast.

Our menu focused on premium, bite-sized dishes that celebrate California's seasonal bounty. We prepped smoked short rib croquettes, local heirloom tomato tartare cups, and citrus-cured snapper crudo—dishes that pack intense flavors into single bites and can be served rapidly.
